Kale chips

So I was at the produce co-op I go to and the gal had kale really cheap.  Not knowing what to do with it….I bought some.  🙂  I have heard kale chips are the rave, so why not try them. 

Well…THEY ARE AWESOME!  So addicting.  Really healthy for you, full of vitamins and minerals.  Great alternative to chips. 

You need a bunch of kale, olive oil, sea salt, pepper and lemon juice.  Wash your kale and tear it from the core into bite size pieces.  I used my salad spinner to get it dry but you can pat it with paper towels.  Place in large bowl and drizzle mixing it with your hand. 



Now place it on a cookie sheet and put into preheated 350 degree oven for 12-20 minutes.  Be careful and watch it…it tends to burn easily.   Store in an airtight bag. 

It is so good!  I had to walk away or I would have eaten the entire batch.  It is definitely gonna be a snack I make often for our family.  YUMMO.  If you make it let me know how it goes.

Trying new things is going to be something I do this summer.  I love to cook and a healthy lifestyle is very important, so why not step out of the norm.  It is going to be an adventure.  I am always up for one.  What about you?
